It is a universal truth that it is the outer beauty that attracts, and the inner beauty that captivates. Same is true for cake!

 

As much care and attention to detail I spend on the design of my cakes, more time is spent perfecting flavours and textures. I put high expectations on my cakes. My ethos is flavours should not compete with another, they must be complimentary and never too overbearing. 

Not too sweet, not too heavy, never bland or too complex.

As the crowning end to a celebration, the wedding cake serves as the last tiny bit of magic; it's not supposed to introduce a whole new firework of flavour explosion.

Simplicity and harmony, and has to taste amazing. That's my flavour philosophy
